Then, we hand fillet and small-batch smoke this very special catch with alder wood, in the traditional Northwest method for a smoked salmon unlike any other, moist, flaky, fully cooked and ready to enjoy. No refrigeration required. Like all SeaBear salmon, each fish is filleted by hand, small-batch smoked, vacuum sealed in our famous gold pouch and gently cooked.
